Recipe Alert: Sick Day Turkey and Kale Soup!

Sometimes, when you get sick, you just need a little TLC. And sometimes, there's no one around who can bring you the soup that you so desire. And when you're a grown up, you KNOW that chicken noodle soup from a can is not the greatest thing for an already sick body. So, when I felt my cold slam dunk me like David Robinson, I researched and found a neat little turkey and kale soup recipe. Thing is, when I'm sick, I'm really tired, so I took the recipe and made it even EASIER and HEALTHIER. I opted for chopped stuff and ditched the rice (my research overtime has taught me I'm prone to Kapha imbalances, so when I've got a cold, rice is a no-go).

I know my busy friends, yogis and parental units can use a little help when feeling under the weather so I hope I shed a little sunshine with the easy recipe below!

Sick Day Turkey and Kale Soup


3 Tablespoons Olive Oil

1 Sweet Yellow Onion, Diced

1 1/2 Tsp Garlic, Minced

3 Carrots, Chopped

1 lb Turkey, Ground

1 Bunch Curly Kale, Ribs (stems) Removed

4 Cups Chicken Broth

*Suggestion: I know sometimes this can get expensive, but I'd love to encourage you to buy organic and/or things already chopped, especially when you are sick, tired or both :)


1) Saute olive oil, diced onions (as much as makes you happy!), garlic and carrots (better if already chopped, especially when sick! Chopping 3 carrots while sick wasn't fun!) in a medium sauce pan until onions are translucent aka kinda clear-like. Enjoy the neat aroma! Or stand over it to clear sinuses lol

2) Fold in the turkey (ok, I just wanted to say that, but seriously... just dump it on in!). Cook until turkey is white. Add salt, pepper or any other desirable seasonings.

3) Transfer ingredients to medium or large pot and add chicken broth. Recipe also says turkey broth, but I've never seen that at the store (have you?!). Homey don't have time to make homemade turkey broth. Anyway, I digress...

4) Bring pot to a boil. Then add kale. Cover with lid and have kids stand and watch the magic of kale wilting. No touching the pot, of course!

5) Serve after a bit of a cool down in your favorite bowl or cup, grab a big spoon and put on some Netflix.

6) Feel better soon!!
